Ancient documents tell us that the hills around Gai have always hosted the Merlot variety, a vine that thrives in this favourable micro climate, which exalts its scents and structure. The grapes are harvested at the end of September and then undergo two weeks of maceration, followed by drawing off and placing in French oak casks. The resulting wine is ruby red with flashes of garnet. The scent is intense and elegant, reminiscent of red berries and cinnamon.
